Four Seasons Hotel Prague is looking for a talented Restaurant General Manager to join our diverse team of the Italian restaurant & bar CottoCrudo.

About the Job

The stylish restaurant and bar CottoCrudo has a unique view on the Prague Castle and the Charles Bridge. CottoCrudo means “cooked and raw” and introduces a new dining and lounge concept where classic service meets the innovative trends.

About You

You will be ideally a senior professional with strong leadership, interpersonal and analytical skills. You should be able to prioritize and adapt to the changing needs of the operation, while having a solid work ethic, good business acumen and a passion for service. You will support the Director of Food & Beverage and you will be a part of the leadership team who collectively makes key strategic and operational decisions for our main F&B outlets. You will be responsible for a smooth day-to-day operation of the restaurant and the bar. Your primary responsibility will be to ensure that our guests receive the highest level of food quality and service. Other duties involve proper team management and development, annual budget monitoring, managing labor and restaurant operating expenses and developing relationships with guests, key suppliers and industry associates.

About the Job and expected responsibilities:

  • Select, train, evaluate and lead all employees, supervisors and assistant managers in the restaurant and the bar to ensure that established cultural and core standards are met with long-range strategic planning for outlet operation.
  • The ability to provide recognition, promote good public relations, and handle complaints, concerns or special requests of guests, clients, and group contacts.
  • Describe and ensure quality of all food items.
  • Provide expert knowledge of wine and spirits in an environment dedicated to an attentive and distinctive experience for breakfast, lunch, or dinner.
  • Work closely with the Director of Food & Beverage, Executive Chef and Sous Chefs to design an effective menu and wine list while ensuring excellent product quality ; attend regular operational meetings to ensure effective coordination and cooperation between departments.
  • Analyze the financial performance of the restaurant, develop strategies to enhance the financial performance.
  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory and cash control. This also includes forecasting covers and revenues, preparing monthly payroll.
  • Observe physical condition of facilities and equipment in the outlet and make recommendations for corrections and improvements as needed.
  • Have a flexible schedule with the possibility to work morning/afternoon/evening shifts, weekends, and holidays.

Qualifications in detail

  • Bachelor degree preferably specializing in hotel/restaurant management or equivalent experience is required.
  • 3-5 years of years of previous management experience in a luxury hospitality environment.
  • Passionate Food & Beverage operator, following current trends.
  • Ability to find creative solutions while taking ownership for duties and tasks assigned.
  • Personal integrity with the ability to work in an environment that demands excellence.
  • Reading, writing and oral proficiency in the English and Czech language.
  • Working computer skills and knowledge including but not limited to Excel, Word, Internet and Micros.

What to Expect

This position is offered for a definite period of time of 24 months with a possible unlimited extension based on your performance. Your trial period will be 6 months. Feedback is a key; therefore, you will be asked to give your feedback on a regular basis and you will also have an informal chat with your 1 up manager and mentor.
